Week 1 – Chicken Saute

Week one was fun! We made a chicken saute! Lesson #1 paring knives cut! About 1/2 way into the class almost 1/2 the class was bandaged up! Luckily I was not the first person to chop off a finger (it wasn’t that bad). I was doing my tomato concasse, and was using my paring knife to remove the stem and my knife slipped and took out a tiny chunk of my middle finger. My mise en place was great! I was actually organized for once, and if you know me that in itself is a miracle! Got my pan on the stove, sauteed up my chicken breast. I took my chicken out and walked over to my station to get my onions and burned my sauce! Lesson #2 take your ingredients with you! I started it over but after all was said and done. My chicken saute was great! I actually liked it! *GASP*
