Shirred Eggs, Poached Eggs, Fried Eggs, Egg Omelet, Quiche! Wow, I feel like Bubba in Forrest Gump (instead of shrimp, overwhelmed with EGGS!) This week’s topic was the wonderful world of eggs, but no scrambling here! I learned that clarified butter makes everything 1000 times better and so does coarse Kosher salt. I ate the best Fried Egg I have ever tasted, cooked over medium, and I flipped it, and didn’t drop it on the floor or bust the yolk!! I also cooked Shirred Eggs. This is a ramekin lined with ham, 2 eggs cracked over the ham, its baked until the whites are just set, then heavy cream, sherry and Swiss cheese are added and baked til done. OMG this was amazing! I would love to try this again with bacon or sausage! We also poached an egg and it tasted just like the fried one, my first time trying/tasting one. We also did a shrimp and avocado folded omelet. This was my least favorite thing. When chef asked me to taste it I was like ewww, but I did. It was ok, but I am not a fan of the shrimp and eggs, although some of my friends in the class said this was their favorite. The last thing we tried was Quiche Lorraine. This is a pie shell line with bacon and Swiss cheese then an egg custard is poured on top and baked for an hour. I tried it, it was ok. But my mom and Kaitlynn loved it!!     Heather,
    Girl you are on the right path! Keep this up thru-out your stay with us and you will have a terrific record of your time at JFCI! One suggestion…there is a way to label each photo. Find out how. If you have problems contact jennifer.white@nicholls.edu for help with all things technical.

    Heather, this blog looks fantastic, as do all of the dishes you’ve made! I’m really proud of you for going after your dream. I’m also happy to hear that you’re broadening your palate a bit LOL! Keep up the good work…we’re all rooting for you! Love ya!
